Fish in a spicy coconut sauce with smashed potatoes

Here's an authentic recipe of yours truly. Just came up with it today and thought of sharing. I think I use somewhat different methods with some of my cooking, but it's easy and it's deviously delicious so nobody is whining!


- Take a long oven pan or lasagna pan that is at least 5cm/ 1½ inch deep. Put 1-2cm/ ½inches of shrimp to cover the bottom. You can leave these out if you don’t like shrimp.


- Put the frozen Alaskan Pollock on top of the shrimp. You can use other fish too; just make sure there isn’t any skin on it.


- Take a small baking bowl and put 2 fish-bouillons and some spices in it. Use as much as you like them. I put about 1-2teaspoons of each. I used salt, pepper, citron pepper, onion, garlic and chili; all in powder-form. Some herbs go well with fish too.


- Pour 2-3dl of boiled water on the spices and mix until the spices melt in the water. Add about 3dl coconut milk and mix until the broth/sauce is smooth.


- Pour the broth slowly on top of the fish and not all in one spot, but all around the fish so the Pollock gets flushed with it before the broth settles in the bottom.


- Put the pan in the oven on the second lowest height, and bake in 200c for about 30 minutes.


- Peal and chop the potatoes (about 4/eater) and boil them until they break. Poor away the boiling water. Smash the potatoes well. Add a little bit milk, butter and salt. Smash some more until the texture is right.


- Bon apetit.
